My “meal on the fly”
Yesterday was crazy busy and I didn’t have an opportunity (take the opportunity, rather) to really plan for dinner. When I picked the boys up from afterschool they had had pizza, so they were good to go. Tray (who’s home briefly from college) was out with friends and Hubby had an evening meeting. That left this Mommy on her own to figure out dinner. So, I made up a “meal on the fly” from ingredients already on hand.
Ingredients:
● Angel Hair pasta
● grape tomatoes
● mixed greens (from a salad mix in the fridge)
● goat cheese (didn’t have any parmesan cheese)
● olive oil
● butter
● garlic powder
● lemon
● balsamic vinaigrette
Sounds delicious, doesn’t it?

The outcome: It was NOT delicious at all. Thus, the final ingredient, balsamic vinaigrette. Well, I tried. Things don’t always turn out as planned. And I ate it anyway because I didn’t want to be wasteful. Stay tuned for my next episode of “Meal on the Fly”…
